turkey chili.
i thought it was about time i added MY chili recipe... since everyone else already has! this is yet another deceptively delicious recipe and it turned out sooooooo delicious. the only thing it was lacking was cilantro, so i topped mine with a few sprigs. enjoy!
ingredients:
1 tbsp olive oil
1/2 cup chopped red onion
1 lb ground lean turkey
2 cloves garlic, minced
1 tbsp chili powder
1 tsp salt
1/4 tsp paprika
1/8 tsp pepper
1 {15 oz} can chopped tomatoes
1 {26 oz} carton low sodium chicken broth
1/2 cup red pepper puree {doesn't need to be cooked before pureed}
1/2 cup carrot puree {doesn't need to be cooked before pureed. canned carrots work great for this, though}
1/4 cup cornmeal
1 {15 oz} can kidney {or your favorite} beans, drained and rinsed.
directions:
cook onions in olive oil {vegetable oil is fine, too} over medium heat in a large pot. cook until onions begin to soften, about 2 minutes. sprinkle turkey with the garlic, chili powder, salt, paprika, and pepper. add turkey to the pot and cook, stirring occasionally until the turkey is no longer pink, 5-6 minutes. stir in tomatoes. add broth, red pepper puree, carrot puree and cornmeal. stir well. bring to a boil, reduce heat, and simmer, covered, 15-20 minutes, or until the flavors have blended. stir in beans and cook a little longer, just to heat them through. serve with your favorite toppings!
