Moist Zucchini Bread


3 eggs
2 c. sugar
1 c. oil
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking power
2 c. grated zucchini
3 c. flour
1 c. chopped nuts (optional)


Beat eggs until foamy. Add sugar, oil, and vanilla. Sift dry ingredients together and nuts and zucchini.

Bake 350 degrees for 1 hour.

Time: Prep 10 min + cooking 1 hr
Makes: 2 loaves

YUM!!!!! this may be a dumb question... but does it make 2 small loaves? like what size of a loaf pan are we talking here?

we're talking medium size loaf pans...ya know the normal ones, I guess. you can use the small ones, it would just make four of them instead of two.

i made this tonight and seriously... YUM. and so so easy. loved it.
