Every Sunday we go over to my in laws for dinner. We had a pork roast (for the second day in a row :) mashed potato's, salad and rolls-- Yummy!
For dessert we had ice cream from target- 'chocolate overload' I think my new favorite.

Monday at Cindy's
I wasn't sure what to make last Monday night for dinner, so I decided to use one of the recipes from this blog. I had all the ingredients for Gina's mini meatloaf recipe and decided to try it out. I am so, so thrilled that I did! They were delicious! Thanks Gina for sharing your recipe. It is going to be a regular in our home.
Along with the meatloaf, we had baked potatoes (topped with sour cream and cheese), refrigerated biscuits and butternut squash. I boiled the squash (which was cubed) until tender, I then drained the excess water and moved to a serving dish. I added a tablespoon of butter and a few dashes of salt and pepper and then mashed with a fork. So simple.

Low-Fat Broccoli Cream Soup
Ingredients:
2 cups chopped fresh or frozen broccoli
1\2 cup chopped onion
2 stalks celery, chopped
1 can reduced-sodium chicken broth
2 tablespoons cornstarch
1 can fat-free evaporated milk
How To:
In a saucepan, combine broccoli, onion, celery and broth; simmer for 10-15 minutes or until vegetables are tender. Puree half of the mixture in a blender; return to the saucepan.
In a small bowl, whisk cornstarch and 3 tablespoons of milk until smooth. Gradually add remaining milk. Stir into the broccoli mixture. Bring to a boil; boil and stir for 2 minutes.

Saturday at Kendra's
On Saturday we had a small get together with some friends for the Utah game and enjoyed a pork roast, potato's, carrots and rolls. Dinner was very simple. Throw a roast, potato's and carrots into a crock pot. Add seasonings of choice - slowly cook all day.
For dessert we had a yummy cheesecake. I bought the cheesecake at costco but made the sauce. Its the best sauce ever- so simple and tastes amazing.
Sauce:
4 cups sliced strawberries (about 1 1/2 pounds)
1/2 cup water
2 tablespoons sugar
1 tablespoon water
2 teaspoons cornstarch
2 teaspoons fresh lemon juice

To prepare sauce, combine sliced strawberries, 1/2 cup water, and 2 tablespoons sugar in a small saucepan over medium-high heat; bring to a boil. Reduce heat, and simmer 5 minutes.

Remove from heat. Strain mixture through a sieve into a bowl, pressing lightly with a spoon; discard solids.

Return mixture to pan. Combine 1 tablespoon water and 2 teaspoons cornstarch in a small bowl, stirring with a whisk. Add cornstarch mixture to pan. Bring to a boil; cook 1 minute, stirring constantly. Transfer mixture to a bowl; cool to room temperature. Stir in 2 teaspoons juice.

Tilapia and Salad

My husband is not a huge fish lover so if your like him and not incredibly into it either, don't worry its not very fishy.
Season both sides of the fish with no salt organic seasoning (from costco)
Place fish in tin foil and add a tablespoon of butter. Wrap it up.
Place in a bbq or oven, cook through. (We love to cook it in the bbq, leaves it with a little smoky taste)
in bbq - cook 15 minutes.
Enjoy.
