Simple & Healthy Kids Lunch


Who said Doritos aren't healthy?
Okay, okay . . . but in this small portion, you betcha.  I think it's important to remember "all things in moderation."  My kids love tuna on wheat sandwiches.  And my daughter loves strawberries, while my son enjoys carrots.  Here's the rule of thirds that Megan pointed out: sandwich, fruit, and chips.  And 100% juice to drink.  They devoured it - I mean look at the picture...my daughter couldn't wait to eat her sandwich before I took the picture.  And actually I let her take the picture - she's an Eat Your Veggies Peas blog cook in-the-making. :)

Helpful Tip...
Also in doing this challenge I've found an easy way to ensure my lunches have at least one, if not more, healthy items.  After I've come home from doing my grocery shopping and getting all my fruits and veggies, I immediately rinse, cut, slice, or peel them.  Then I stick them in Tupperware stacks in my fridge.  This way when lunch (or dinner) rolls around, I can reach in my peeled and cut carrots Tupperware and throw them on our plates in less than five seconds.  Not to mention, dice them up real quick and throw them in my Tortellini Soup for dinner.

Salmon Brown Sugar Glaze

Sorry, I don't have an original picture . . . we yummed this up way too quickly.  So here's a beautiful picture I found of Brown Sugar Salmon on the Internet. :)

ingredients
3 T brown sugar
1 T honey
2 T butter
1/4 cup dijon mustard
2 T soy sauce
2 T olive oil
1 T finely grated ginger (I used powered ginger, just less - like 1 tsp)

instructions
Melt the brown sugar, honey and butter in a small saute pan over med-high heat.  Remove from the heat and whisk in the mustard, soy sauce, olive oil and ginger.  Let cool.

Brush over salmon before cooking (with veg. oil and salt and pepper to taste--optional).

Serve with broiled red potatoes and your favorite steamed veggie.  Melt in your mouth good!  Enjoy.

crab salad.

this is just a basic salad recipe, but it's my favorite summer salad, so i thought i'd share. you can add or leave out vegetables as you prefer.

ingredients:
8 oz macaroni, cooked, rinsed
8 oz fake {or real!} crab meat, shredded
1 stalk celery, chopped
2 roma tomatoes, seeded, chopped
2 green onions, finely chopped
1/3 cup carrotts, coarsley shredded
cubed cheddar cheese {i add this per serving, not to the whole salad, so it doesn't get soggy if you have letftovers}
2-3 tbsp mayo or miracle whip {i prefer miracle whip}
2 tbsp lemon juice
salt & pepper to taste

directions:
combine all ingredients, refridgerate, and serve!

spice rubbed tilapia.

this is a very simple rub that would also be good on chicken.

1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon kosher salt {i used less}
1 teaspoon fresh cracked black pepper

mix all rub ingredients well.

brush olive oil onto the tilapia fillets. rub the spice mixture onto the oil-coated fillets. grill the fillets on medium heat for three to four minutes per side.

{at the last moment, i realized my grill is out of propane, so i cooked them in a pan on medium heat for 3-4 min on each side. they turned out great.}

Friday at Kendra's

Tilapia and Salad



My husband is not a huge fish lover so if your like him and not incredibly into it either, don't worry its not very fishy.

Season both sides of the fish with no salt organic seasoning (from costco)
Place fish in tin foil and add a tablespoon of butter. Wrap it up.
Place in a bbq or oven, cook through. (We love to cook it in the bbq, leaves it with a little smoky taste)
in bbq - cook 15 minutes.
Enjoy.
