tuesday at ariel's

chicken enchiladas:
1 can chicken
2 big spoonfuls sour cream
2 tsp taco seasoning
1 can enchilada sauce
4 flour tortillas
cheddar cheese
directions:
drain chicken & separate chunks with a fork. add sour cream {you can really add as much or as little as you like} and taco seasoning. spoon into tortillas, top with some cheese, and roll them up. line enchiladas in a glass baking dish. smother with enchilada sauce. top with cheese. bake at 350 for 20 minutes, or until heated through.
note:
i like to buy the uncooked tortillas. you can find them at any grocery store near the cheese & sandwich meat. they make all the difference!! you just have to cook them over a pan or griddle for about a minute each. i ♥ them.

  2. the longer and longer that tortilla chip sits in that salsa bowl it's gonna get waaaay too soggy for eating. and every time i check back it's still in there.
