Thursday at Emily's


Chicken "Alfredo" over Whole Wheat Penne


2 chicken breasts - frozen or fresh
1 can cream of chicken condensed soup
1/2 packet of Italian salad dressing dry mix
4-ish oz cream cheese

Put the first three ingredients in a crock pot and cook on High for...well as long as you want, at least 3 or 4 hours. Right before serving, shred the chicken with a fork and add the cream cheese to the sauce, stirring 'till it is combined. Sometimes I add a bit of milk if the sauce seems too thick. Serve over pasta sprinkled with freshly shredded parmesan.

No it's not true alfredo, but it's easy and pretty fool-proof. Oh, and it's good!
