ingredients:
1 tbsp vegetable oil
1 medium onion, chopped {i used about half}
2 cloves garlic, minced
1 tbsp ground cumin
1 tsp chile powder
1 can diced tomatoes with green chiles
2 tbsp lime juice {i used the juice from half a lime}
1 can cooked, shredded turkey
1 can pinto beans, rinsed
4 10-inch flour tortillas or wraps, warmed
to top:
grated monterey or pepper jack cheese, shredded lettuce, sliced avocado, cilantro, diced tomatoes... basically any of your favorite mexican toppings.
directions:
heat oil in a skillet over medium heat. add onion and cook, stirring until softened. stir in garlic, cumin, and chile powder and cook for about 30 seconds. add tomatoes and lime juice; bring to a boil. reduce heat to a simmer and cook until the onions are very soft {about 5 minutes}. stir in turkey {or chicken, if you prefer} and beans and continue cooking until mixture is heated through {3-5 minutes}. divide turkey-bean mixture among tortillas. top with your favorite toppings, roll into burritos and serve. serves 4.
note:
the original recipe called for 4 cups of shredded turkey. i felt like this was too much turkey and not enough beans, but if you wanted to add an extra can of turkey, it would serve 6 easily.
