sweet-n-sour meatballs

So obviously I'm all about fast-n-easy...and these fabulous meatballs are no exception. I decided to go against the grain and take a picture of the cooking in process. :) These are super good, and super easy.

Ingredients

1/3 - 1/2 package of frozen meatballs (I dunno, like 15-20 meatballs?)
1 can pineapple (chunks or diced)
1 green pepper, sliced
1/2 cup BBQ sauce
2 cups rice

Instructions:

Cook meatballs according to package (you're basically just warming them up and browning), add pineapple (with it's juice!), green peppers and BBQ sauce. Serve over rice.

Serves: about 4
Time: about 20 minutes

*TIPS: You can thicken the sauce by adding some cornstarch. And I buy my meatballs at Walmart in their frozen section, the "Homestyle" kind.

  1. this sounds soooo yummy! i wish Sean would eat it so i could make it! he doesn't like fruit in dinner-food. he actually doesn't like most fruit at all... ever.

  3. i soooo agree. i love the grilled pineapple at rodizio/tucanos/samba grill :) so good.

    and believe me, i have made a lot of progress with sean over the years. i think he hated chinese and mexican food when we first met. my next goal is greek.

  5. i made these for dinner tonight and they were yummmy! i added a little bit of chopped onion {because i didn't have a green pepper and i needed to add SOMETHING!} and i didn't put the pineapple chunks in. i just added the juice. Sean would never go for pineapple chunks, so i put some pineapple on top of MINE after i dished it out. anyway... yum! i loved the recipe.
